What you’ll need:
Pizza crust:
3 ½ cups of grated zucchini
3 eggs
2/3 cup flour
½ cup grated Mozzarella
½ cup grated Parmesan
½ tsp dried basil
Topping:
Pizza sauce
Shredded cheese
Toppings of choice
Directions: Pre-heat oven to 350. Coarsely grate zucchini and let it sit for 15 minutes. Squeeze out excess moisture. Combine all crust ingredients and spread into an oiled 9x13 pan. Bake crust for 20-25 minutes, or until surface is dry and firm. Brush the top with oil and broil under moderate heat for 5 minutes.
Add tomato sauce, toppings and cheese. Bake at 350 for 25 minutes. Cut into squares and serve.
Baking temperature/duration: 350 degrees, about 25 minutes for crust and 25 minutes for entire pizza.
